Rice Crispy Treats

This is a delicious kids’ snack for in between. What you will need is:

  • Butter
  • Mini Marshmallows
  • Food Coloring
  • Rice Crispy Cereal

Instruction:

  • melt 3 tbsp of butter per leaf color in a sauce pan on medium heat 
  • Add 3 cups of Mini Marshmallows per color and stir them until melted
  • turn off the heat and add food color
  • add 3 cups of Rice Crispy Cereal per color
  • pour the Rice Crispy Treat mixture onto a cookie sheet
  • Use a leaf cookie cutter to cut out the Rice Crispy Treats 
  • Enjoy!

Pumpkin Roll

An amazing sweet autumn dish for cozy afternoons with your kids. You will need…

For the cake:

  • 3/4 cup sifted all-purpose flour
  • 1 tsp. baking powder
  • 1 tbsp. pumpkin pie spice
  • 1/4 tsp. salt
  • 3 eggs, lightly beaten
  • 1 1/2 tsp. pure vanilla extract
  • 1 cup sugar
  • 2/3 cup canned pumpkin puree

For the filling:

  • 8 oz. full-fat cream cheese, softened
  • 1 cup powder sugar
  • 6 tbsp. salted butter
  • 1 tsp. vanilla extract

Instruction:

  • Preheat oven to 190°C and line a jelly roll pan with parchment paper
  • In a medium bowl, whisk flour, baking powder, pumpkin pie spice, and salt 
  • In a large bowl, whisk sugar, eggs, vanilla extract, and pumpkin puree 
  • Add dry mixture to wet mixture and stir 
  • Pour batter into pan and bake for 15 minutes
  • Turn cake out onto a work surface and roll the cake
  • Le it cool completely
  • For the filling combine all ingredients in the bowl of a stand mixer and beat until fluffy
  • Unroll cake and spread cream cheese mixture onto it.
  • Roll the cake up and wrap tightly in plastic wrap.
  • Put the cake in the fridge for 1 hour
  • Dust cake with powdered sugar
  • Enjoy!

Cinnamon Baked Apples

This is a perfect afternoon dish kids you can prepare on cold and rainy days. You will need:

  • 3 apples
  • 3 tsp. coconut oil
  • 3 tsp. sugar
  • pinch cinnamon

Topping:

  • 1 tbsp. coconut oil
  • 1/4 cup white whole wheat flour
  • 2 tbsp. coconut sugar
  • 1/4 cup rolled oats
  • 1/2 tsp. cinnamon
  • pinch salt

Instructions:

  • First, heat the oven to 190°C.
  • Put apples in a square baking dish. Place 1/2 tsp. coconut oil and 1/2 tsp. coconut sugar in every apple and add some cinnamon.
  • For the topping: melt coconut oil and mix all ingredients together. Then spread it over the apples.
  • Cover and bake in the oven for 45 -60 minutes.
  • Serve with a bit of ice cream and enjoy!

Apple Pie Bites

A sweet and tasty autumn dessert you and your kids will love. You will need:

  • 1/4 cup brown sugar
  • 1 tsp. apple pie spice
  • additional: 1/4 tsp. apple pie spice for sprinkling the crescent rolls
  • 3 tbsp. melted butter
  • 1/3 cup chopped pecans
  • 1 apple, sliced into 8 slices
  • 1 can crescent rolls (e.g. Pillsbury Original)

Instruction:

  • Preheat your oven to 190°C and prepare a baking sheet with parchment paper.
  • Combine brown sugar and the apple pie spice in a small bowl.
  • Melt the butter and coat apple slices in it.
  • Put the crescent roll triangles on baking sheet. Evenly, cover triangles with brown sugar mixture.
  • Then, sprinkle the triangles with the chopped pecans.
  • Place an apple slice on the wide end of each triangle and wrap the dough around the apple slice.
  • Cover the crescent rolls with remaining butter and sprinkle them with the additional apple pie spice.
  • Bake the crescent rolls for 10-12 minutes, until their color becomes golden brown. 
  • Enjoy!

Pumpkin Bread Pudding

For this amazing sweet autumn dessert you will need:

  • 1  loaf day-old challah bread, cubed into 1-inch pieces
  • 720 ml milk
  • 1 can pumpkin puree
  • 135 g brown sugar
  • 100 g granulated sugar
  • 4 eggs (lightly beaten)
  • 1 tsp. pure vanilla extract
  • 2 tsp. pumpkin pie spice
  • 1 tsp. cinnamon
  • 1/4 tsp. nutmeg

Instructions:

  • Prepare a 9×13 baking dish parchment paper. Toss the cubed challah bread into it. 
  • In a large bowl, whisk together the milk, pumpkin puree, brown sugar, granulated sugar, eggs, vanilla, pumpkin pie spice, cinnamon, and nutmeg.
  • Pour the mixture over the bread in baking dish. Let the mixture sit and soak up for 15 minutes and preheat the oven to 175°C.
  • Place the bread in the oven and bake at 175°C for 45-60 minutes.
  • Remove and let it cool down before enjoying. If you like, serve with vanilla ice cream.
